On Saturday and Sunday 28th and 29th October we welcomed the autumn edition of Wefood Festival “A Weekend in the Taste Factories”, the festival promoted by Italy Post in collaboration with the Italian Touring Club and dedicated to Italy's food and wine excellence.

They were two intense days of education to discover the ancient vinegar factories where theTraditional Balsamic Vinegar of Modena DOP of Malpighi familyTraditional Balsamic Vinegar of Modena It is a high-quality gastronomy product protected by the DOP trademark (Protected Designation of Origin), a name registered with the European Community to indicate a typical high-quality Italian product, whose area of origin and the traditions still used to create it make it so unique that it must be protected from counterfeiting.
Visitors walked around the spaces of our farm, including the vineyards where we grow the grapes for the production of must, the sole and only ingredient of the precious Black Gold, to then discover the ancient vinegar factories where the magic happens: the cooked must is sent to the fermentation, maturation and ageing process inside the batteries of barrels of the oldest woods (chestnut, cherry, juniper, mulberry, oak, acacia) found in the vinegar factories. Hermes Malpighi, fourth generation of the Malpighi Acetaia, involved those present in a real sensory journey to discover flavors and aromas Traditional Balsamic Vinegar of Modena DOP and Balsamic Vinegar of Modena IGP, to explain their production methods. At the end of the educational session, a guided tasting was conducted to discover all the products of the Collection. The visit then concluded with a showcooking by chef Stefano Corghi.
