In the enchanting setting of our French-style garden, where nature expresses itself in all its beauty, we cultivate with passion and respect an aromatic plant with a thousand virtues: the sage.
It has an intense, aromatic scent and velvety leaves, which are used fresh or dried to flavor meat, fish, vegetables, and other dishes.


Sage: What It Is and Why You Should Use It

Sage Salvia officinalis is a herbaceous plant A perennial belonging to the Lamiaceae family. It is native to the Mediterranean basin, where it grows wild.

At the Tenuta del Cigno farm's French-style garden, it is grown without the use of chemical pesticides or synthetic fertilizers, to guarantee a 100% healthy and natural product.

It is born and grows within the ideal habitat: a sunny location with well-drained, sandy soilIt is pruned regularly to encourage the growth of new shoots, and watered consistently, avoiding wetting the leaves completely.


Characteristics and properties of sage

Sage is distinguished by its aromatic and intense perfume, the oval and velvety leaves of a greyish-green colour and the blue-violet flowers, which bloom in summer.
This plant is rich in essential oils that give it numerous beneficial properties:

How to use sage in cooking

La sage It is a very versatile ingredient, which can be used in many ways in the kitchen.

Its leaves, fresh or dried, can be used to flavor and season meat, fish, vegetables, soups, sauces, and fillings. It pairs particularly well with fatty meats like pork and lamb, but is also delicious with potatoes, beans, and mushrooms.


The recipe: Chicken Rolls with Sage and Balsamic Vinegar

A very simple recipe to cook, which combines the delicacy of chicken with the intense aroma of sage, with a final touch of Traditional Balsamic Vinegar of Modena DOP that enhances its flavor and deliciousness.

Ingredients for 4 people:

  • Salt and black pepper to taste
  • 8 slices of chicken breast
  • 8 sage leaves
  • 4 thin slices of raw ham
  • Traditional Balsamic Vinegar of Modena DOP
  • Extra Virgin Olive Oil to taste

Preparation: Lay out the chicken breast slices and place a sage leaf and half a slice of prosciutto on each. Roll the chicken slices into rolls and secure with a toothpick.

In a pan, heat a drizzle of oil and slowly cook the rolls over medium heat until golden brown. Drizzle with a few drops of Traditional Balsamic Vinegar of Modena DOP and transfer to a serving dish.

Your rolls are ready to be enjoyed, perhaps accompanied by an arugula and cherry tomato salad.
