The story of the Malpighi family, owners of the Tenuta del Cigno farm, told in a book that celebrates the city of Modena and Balsamic Vinegar.

The book titled “ACETAIA MALPIGHI Artisans of Made in Italy“, just published by the Malpighi family, founders and owners of our farm Swan Estate, is a tribute to the city of Modena, to grandmother Maria and to the previous generations who made the history of this an ancient vinegar factory that has become an international company.
The volume celebrates two masterpieces of Modena's know-how, both obtained with the grape must of our vineyards: theTraditional Balsamic Vinegar of Modena DOP, of which the company is the largest producer, and theBalsamic Vinegar of Modena PGI. You'll find details on production methods, with references to the two Consortia that regulate their protection, advice on how to use them, and much more. The goal is first and foremost to educate about the world of Balsamic Vinegar and to provide enthusiasts with an additional tool for interpreting and appreciating these two great products, made in Modena and renowned throughout the world.

A part of the book is dedicated to the Emilian recipes Grandma Maria's recipes, revisited with a modern twist, to reveal to readers where Balsamic Vinegar finds its greatest expression.

In the book, the company then introduces the two Condiments that in Malpighi's production are alongside the excellent IGP and DOP products, always made with the must obtained from the grapes of our vineyards: Delicious e Tasty.
- Delicious, the first White Condiment obtained from white Trebbiano Modenese grapes from the family vineyards, designed to bring transversality and innovation to the world of balsamic vinegar by exploring new pairings (with fish, river and seafood dishes, with fresh and candied fruit, edible flower salads, Greek salad, caviar, cocktails and drinks). An Umami product, with an intense flavour, difficult to categorise into the four classics we are all accustomed to: neither sweet, nor salty, neither bitter nor sour, but incredibly full and tasty.
- Tasty, a product in demand all over the world, celebrated in its first 20 years with a dedicated limited edition box set; the first Dark Condiment obtained from cooked must of Trebbiano and Lambrusco grapes from the family vineyards. A “mid-range” product, a soft and full-bodied condiment that in some characteristics is similar to the two excellent products that inspired it, the DOP and the IGP, but whose use and consumption in the kitchen is certainly less exclusive and more "carefree".
