The Caveau is our space created to guard something truly precious , with a secret recipe handed down from generation to generation : Traditional Balsamic Vinegar of Modena DOP , a haute cuisine product that the Malpighi family company has been producing since 1850.
Our vault houses more than 3 antique barrels made from the finest woods, where Traditional Balsamic Vinegar of Modena DOP slowly matures to achieve a perfect blend of aromas and flavors . A product that improves with time , but only when welcomed and cared for by expert hands that, with passion and love , care for it as if it were a child.

From the expert care and our love for Traditional Balsamic Vinegar of Modena DOP comes the “ Batterie a balia ” service dedicated to those who, like us, love this incredible product that only the prosperous lands of Modena can offer.
The Battery Wet Service includes:
- possibility to purchase One of our barrel sets, for personal use or as a special gift; if you live in the Modena area, you can choose to bring it to your home or keep it in storage in our vault.
With love and precious care, just like a nanny, our master taster Ermes and his staff personally tend to each set of barrels on our estate, safely stored, overseeing the slow and patient aging of Modena's precious Black Gold . To return, after long years of aging, a delicious nectar that will become part of the family heritage.
In addition to the battery-powered service, the farm provides:
- consultancy for thelaunch of new barrel batteries;
- consultancy for the care and maintenance existing barrels (have you inherited or received a set of barrels as a gift but don't know how to manage them and continue this important tradition? We'll take care of it: we'll follow the entire journey of your set directly to your home);
- market value estimate of the family barrels;
- provision of certified musts to start a battery of Traditional Balsamic Vinegar of Modena DOP;
- provision of cooked musts of various vintages;
- arrangement and hooping of the barrel batteries;
- consultancy for thepurchase of barrel batteries.
